Chickpea/Garbanzo Bean Snacks

This recipe is for a good friend and a new dad. I first tried this recipe for my daughter to have healthy snacks to take to work. It took a couple of tries to find the ones we enjoyed, but it was well worth it. Please note that chickpea is also a garbanzo bean, just a different name.

Basil Strawberry Jam (No Pectin)

This recipe is for a small batch of jam. I love using this recipe because I never know when I might find or get ripe fruit. Even though I am a home cook, I don’t usually keep Pectin in my pantry, and with this recipe, I don’t have to. I also like the ability to regulate how much sugar you put into a batch.

Beef Stew

I love beef stew and use this recipe when I need to stretch my food budget. It is also a good way to use food that has been donated and needs to be used before it goes bad. This stew gives you that warm-down home feeling. This recipe also makes great leftovers and freezes well.

Yummy Texas Chili

This is one of my favorite recipes of all time. Chili always makes me think of two things; chili cheese dogs or chili cheese tater tots during the summer. In the winter with two feet of snow on the ground, spaghetti red is one of my favorites. For me, chili is so universal.

Oven-Roasted Potatoes

Oven-roasted potatoes are so easy and versatile. I love making these. I can switch up the seasonings to match whatever I am making for dinner. Also, with oven-roasted potatoes, you can cook them with other dishes in the oven. I am known to cook my chicken and potatoes at the same time. Well, almost at the same time. The chicken, of course, has a longer cooking time, so you can put the potatoes in when your chicken is close to being done.

My Inspired Spaghetti Sauce

The origins of the recipe are a mix of French, Italian and Asian. When I was growing up, Julia Child was the original television chef. Although she taught French cooking, she inspired many of us to experiment with other types of food. At the time, the ingredients used in her cooking were not readily available to most people. This sent me down the road to Italy. *Trivia fact: Some believe that pasta, including spaghetti, originally came from Asia.

Bacon Brussel Sprouts

Brussel sprouts are one of my favorite vegetables. This is one of our favorite side dishes. People often say eww Brussel sprouts, but I feel if they are made right. They are packed with so much goodness. These little babies have many health benefits. They contain a variety of nutrients, antioxidants, and are a good source of fiber. It is also quick and easy to make.

Southern Cornbread

This recipe has been in my heart and head for about 50 yrs. When I learned this recipe, I also learned that you can measure ingredients with a coffee cup and a teaspoon. I have had to adjust this for altitude and oven temperatures, but it works more often than not.

Those who have chosen to visit this section, you should prepare for something different. My grandfather was the best cook in my family. He taught me to make the most of what I have. I have taken that advice into everything I do. I am a do-it-yourself person. Like most of the things on here, they have been done simply and are budget-friendly. They also have room for using your imagination and making it your own.
