This recipe is for a good friend and a new dad. I first tried this recipe for my daughter to have healthy snacks to take to work. It took a couple of tries to find the ones we enjoyed, but it was well worth it. Please note that chickpea is also a garbanzo bean, just a different name. Garbanzo is Spanish for chickpea. When I was growing up, we referred to them as garbanzo beans. But, as my daughter has informed me, they are now commonly known as chickpeas. This recipe is easy and can have many different flavor profiles depending on how you season them. I have also included in the recipe a version for dried and canned peas.
Dried Chickpeas
- 1lb. package dried chickpeas
- 3 tbl olive oil
- seasonings to taste
There are two schools of thought on how to prepare the beans, to soak or not to soak. I have tried this both ways with mixed results. I suggest you try both ways to find the method and taste you’re looking for.
For those who are using the soaking method, first, rinse beans and then put them in a med-size bowl. Add filtered water until beans are covered. Let soak for a minimum of three hours to a maximum of eight. Rinse beans again and dry them. After they dry, add olive oil and seasonings. Put on a baking sheet in a single layer and bake in a 400 degree preheated oven for thirty to thirty-five minutes. Stir and check them halfway thru the cooking time.
Now for the non-soaking method. The process is pretty much the same, just omit the soaking. Rinse the beans off and set them aside to dry. After they dry, add seasoning and oil. And bake.
I prefer the non-soaking method. In my personal opinion, the beans have a better taste and texter. However, you might not find that the case. Have fun with it. Try different seasons and experiment.
Canned Chickpeas
- 2 (15 oz) cans chickpeas/garbanzo beans
- 2 tbl olive oil
- seasonings to taste
First, rinse beans thoroughly. That should get rid of a lot of the salt. They will still have salt in them, but it should cut the content down. I also would recommend omitting any salt when adding seasonings. Dry the beans and follow the rest of the directions above.
