Pickled Radishes

Recently, on a trip to a local food giveaway, I ended up with about 10lbs of red radishes. Mind you, I love radishes, but that was too many for my daughter and me to eat before they spoiled. So we decided to pickle them. There are so many other dishes you can use them in. They also taste good on their own. I have tried to scale this down so that it should yield a one-quart jar. Spices and brine may vary for your taste buds. Please note that these are to be refrigerated.

Ingredients

  • 1 1/2 to 2 Pounds Radishes
  • 2 tablespoons pickling spice ( regular or extra fancy)
  • 2 cups brine mixture ( 1 cup water + 1 cup vinager)

Instructions

The first thing you will need to do is wash and trim the tops of radishes. Next, thinly slice radishes. I use a rotary grater or a mandolin. Now, please use safety precautions whatever method you choose. Wash your jars and lids in hot soapy water and let air dry. After you have prepared your radishes in a stainless steel saucepan, combine equal parts filtered water and vinegar. Heat to a boil.

While heating brine, put one tablespoon of pickling spice in the bottom of your jar. I have used different brands of pickling spices, and all of them have different tastes too. It’s up to you to find the one you like. Next, lightly pack radishes in the jar and add the other tablespoon of pickling spice on the top. Fill it with the hot brine mixture and put the lids on.

Do not screw the rings down hard. The lids will seal themselves as they cool. When the jar has completely cooled, refrigerate. These will stay good in the fridge for about four months but once open use with seven to fourteen days.

You may also process the radishes. If you use this recipe for canning multiple jars, please consult your canning equipment for the proper use and food safety.

There are many different types of radishes you can use, adjust for the size of slices. I have also made this with various bottles of vinegar and spices. As always, I am a home cook, so you will need to adjust to your tastes. Also, always check anything before you eat it, and if in doubt, throw it out. Please feel free to comment and share.
